Multigrain Bread Extraordinaire

Make ahead soaker of quinoa, rolled oats & wheat bran...
Mixed with 1/4 cup water...
Soak at room temperature overnight...
My messy 'mise en place' once again...notice the error of the molasses - I didn't need that!
Wet & dry ingredients...
A big glob of multigrain goo...
After 10 minutes of machine mixing - finally at 80'degrees...
90-minute room temperature ferment...
More than doubled in size...
Shaped into a boule & a loaf... sprinkled with poppy seeds...
Another 90-minute proof at room temperature...& doubled in size yet again...
Use my matfer (special blade to slice dough) for designs...
Baked at 350' degrees for about 35-40 minutes...Beautiful color & appearance...
The bread was hearty, but yet very light...with a very distinct, yet sweet, flavor...
Made for a wonderful leftover salmon & spinach open faced sandwich...This bread was wonderful toasted with a bit of butter as well...I'll definitely be making this multigrain again!

Marbled Rye Bread

My kind-of-sort-of messy 'mise en place'...I couldn't find white rye flour or clear flour - & ended up using dark rye flour - even though Mr. Reinhart says dark rye isn't appropriate for this Marbled Rye formula & makes for a much heavier loaf....& I didn't have liquid caramel coloring or even coffee powder & was a bit worried that the side note in the book commented that substitutions for the caramel coloring such as cocoa, instant coffee or carob powder makes for a bitter taste in the dough which some people don't like...So I ended up finding an assortment of food coloring (brown included) that I can use during the holidays for cookie decorating...waste not, want not, right?
Light Rye dough...
Mixing the color additive for the separate dark rye dough - entirely the same ingredients except for the coloring...
Not as dark as I hoped...but it will work...
90-minute room temperature ferment for both light & dark...
They both rose a little bit...
Dividing the dough for both the marble design & the spiral design...

Can't wait to slice them to see the designs...

Finished product turned into a Turkey, Herbed Cream Cheese & Basil sandwich on toasted Sprialed Rye Bread...The bread was delicious - very hearty & filling...The dark rye flour turned out to be just fine...I'm sure the white rye adds a much lighter texture...but then again, its nice to use substitutions & have them work as well...

Light Wheat Bread

My messy mise en place...
Wet & dry ingredients...
Coarse ball of dough...
Six minutes of machine kneading - dough is a bit warmer than the desired temperature of 77' - 81'F...
Two hour room temperature ferment...
Doubled in size...
Pressed into a rectangle & formed into a loaf...
Another 90 minute proof at room temperature...
The dough definitely crested above the lip of the pan...
WHOA! After baking for 45 minutes at 350'F its HUGE!!!
Highest rise I've ever seen from my kitchen!


What a solid chunk of bread!
The bread was nice toasted - very distinct wheat texture & taste...Not my favorite - but still fun to try...
