Lavash Crackers

My messy mise en place...
Mixing ingredients by hand first...
Then switched to dough hook for a few minutes...
Smooth dough after about 5 minutes of machine kneading...The dough wouldn't reach the desired 77'-81'degrees -only around 72' - oh well...
A 90 minute ferment...
Doubled in size...
Forming a square after misting the counter with oil & some flour...
Rolling out dough paper thin ...allowed dough to relax covered with a towel for 5 minutes...
Poppy seeds, sesame seeds, kosher salt, paprika & cumin...

Baked for 15 minutes at 350'degrees...edges were thicker & more chewy while the middle was crisp...
A very nice appetizer with hummus...
And pretty all on its own - I'd make a larger batch next time & use some different topping...& maybe try to roll the dough thicker & make pitas... A quick & very fun recipe!

  1. I could go for some of those crackers right about now. I forgot about them. I'll have to make them again. They were fun weren't they?
