Pizza Napoletana

Ah! Pizza! & my favorite kind too! Napolese style! This recipe has been made over & over - even before I started in the Bread Baker's Challenge...The dough above - in the fridge for an overnight rest...
Forming the balls into flat rounds & letting rest on counter at room temperature for another two hours...
Now the fun part! Mushrooms, olives, basil, parmesan, fresh mozzarella, fresh tomatos & sauce...
A perfect thin crust!
We have a Big Green Egg that is fantastic for pizza making & everything else...
Temperatures can get as hot as 900'-1000'degrees & even higher...so it only takes a few minutes to get pizza that tastes like it came from a wood fired oven...

One of my favorite food photos ever! This is a sundried tomato, fresh tomato, basil, black olive & parmesan pizza - with a glass of vino of course!
& the crust is perfect!
For a simple dessert - cinnamon & sugar topped grilled pizza...

Delicious!
